The Perfect Pantry: Birra MOA

MOA (acronym for My Own Ale) is a Florence-located artisanal brewery launched by two passionate homebrewers in 2011. Their beers are carefully crafted, unpasteurized and bottle-fermented. MOA currently produces four types of beer: a blanche, an Irish-inspired stout, an Indian pale ale, and a superb American pale ale named 12 Plato.

Culinary Dictionary: Ribollita

Ribollita, which means “re-boiled”, is a thick, stew-like soup of bread, vegetables, and beans. Ribollita originated as a way of using leftover minestrone, which was reheated (therefore, re-boiled) the following day and served with stale bread that soaked in broth and made the dish heartier.
