    Sugo Finto, which literally means fake sauce, is a pasta sauce made with onions, carrots, celery, tomatoes, and red wine. The word “finto” (fake) alludes to the fact that, unlike a “sugo vero” (proper sauce), sugo finto does not contain any meat but still maintains a meaty consistency.
