SPUMINI MERINGUE LITTLE FOAMS Spumini, which comes from the Italian “spuma” (foam) and translates as “little foams,” are crunchy meringues shaped into fluffy peaks. They look glossy and have a sandy, crumbly texture.

In Florence, you can find spumini at most bakeries. I like to dip these cookie-size meringues in melted chocolate and enjoy them with a good cup of tea. IMG_5350
