Pecorino Toscano DOP is a sheep’s milk cheese produced throughout Tuscany – the word pecorino derives from the Italian pecora, which means “sheep.” It has a smooth texture and a flavor that varies from mild to pungent, depending on its age.

I am a big fan of young pecorino toscano, which has a soft, creamy consistency and tastes milky and fresh. It works great in salads and quiches, and makes delicious sandwiches.
