Ingredients: Vongole Veraci

Vongole Veraci are clams (in English, carpet shell clams) fished along the Tirreno coast. They are fleshy, flavorful and bigger than any other Italian vongole.

In Tuscany, vongole veraci are used in a variety of dishes, including spaghetti alle vongole and zuppa di vongole (clam soup). I like to steam vongole veraci in white wine, and serve them on toasted bread as an appetizer or snack.
