Carciofo Violetto Toscano is a variety of artichoke that is grown in several areas of Tuscany, particularly in the Cornia valley. These artichokes are a beautiful purple color and have tender leaves.They are eaten “in pinzimonio” (a pinzimonio is a selection of vegetables served with extra virgin olive oil in which to dip them) or used to make salads, tarts, frittatas and pasta dishes.
