Culinary Dictionary: Brutti ma Buoni

bruttimabuoni ugly but goodBrutti ma Buoni, which means “ugly but good,” are traditional Tuscan cookies made with crushed almonds, egg whites, and sugar. They are unevenly shaped and coarsely textured.

Although variations of these cookies can be found in different regions of Italy, Tuscan Brutti ma Buoni are crunchy on the outside, moist and soft on the inside. I often serve them after dinner, along with coffee and vin santo wine.
