Fagiolo Zolfino is a sulphur-colored bean that grows in several mountain areas of Tuscany. The word zolfino comes from the Italian zolfo (“sulphur,” in English).

Fagioli Zolfini have a dense, creamy texture, a very thin skin, and a rich flavor. They make excellent soups and salads.
