Culinary Dictionary: Schiacciata

SCHIACCIATASchiacciata, which means “flattened” or “pressed”, is a flat bread rich in extra virgin olive oil. It is the Florentine version of focaccia.

Whereas focaccia breads can be prepared either with vegetable oil or lard, schiacciata is more likely to be made with extra virgin olive oil, an ingredient that abounds in Florentine cuisine. It can be served warm or at room temperature, stuffed with cured meats and cheeses or as it is.
