Culinary Dictionary: Occhi di Bue

OCCHI DI BUEOcchi di Bue, which means “ox eyes”, are shortbread cookies sandwiched with jam, usually apricot or blackberry. This name alludes to their shape resembling the large round eye of an ox.

Occhi di Bue are happily enjoyed throughout all day, both for breakfast and as an afternoon snack. I like to have them after dinner.
