Dizionario di Cucina: Biscotti della Salute

BISCOTTI DELLA SALUTE ENGLISH

Biscotti della Salute, which literally means biscuits of the health or health biscuits, are slices of toasted pan brioche, traditionally eaten for breakfast. They are crispy and only slightly sweet. The word “salute” (health) indicates their high nutritious content (Biscotti della Salute are made with a good amount of eggs and butter).

In the morning, I like them spread with a generous layer of fresh ricotta cheese and topped with a little jam, preferably raspberry or fig. Because they don’t contain much sugar, I find they are also delicious as an appetizer – I usually serve them with prosciutto crudo, mortadella, and dried tomatoes, or spread with butter and topped with anchovies.

Making Biscotti della Salute at home is quite laborious, so I tend to buy them in bakeries. My favorites are the ones baked by the Mattei family in Prato. Their health biscuits are a wonderful golden color and can be found in several groceries and specialty shops in Italy and abroad.


I Biscotti della Salute sono una sorta di fette biscottate toscane, con un maggiore contenuto di burro e uova rispetto a quelle tradizionali. Essendo poco dolci, vengono utilizzate per accompagnare sia preparazioni dolci (come confetture di frutta o creme di cioccolato), sia ingredienti come salumi, verdure sottolio e paté (burro e acciughe è una combinazione fantastica).

Fortunatamente, i biscotti della salute si trovano facilmente nei panifici toscani. I miei preferiti sono quelli di Antonio Mattei di Prato, che sono di un bellissimo colore dorato ed hanno un sapore indimenticabile.
