Culinary Dictionary: Sugo Finto

sugofinto Sugo Finto, which literally means fake sauce, is a pasta sauce made with onions, carrots, celery, tomatoes, and red wine. The word “finto” (fake) alludes to the fact that, unlike a “sugo vero” (proper sauce), sugo finto does not contain any meat but still maintains a meaty consistency.

Carrot, onion, celery and parsley should all be finely chopped, then sautéed in a pot rubbed with garlic, until the onion becomes translucent and the other vegetables are soft. Once the vegetables turn golden, add a glass of red wine, preferably Chianti, and let it evaporate. Now add some canned tomatoes, stirring from time to time. In one hour or so, sugo finto will be ready.


Il Sugo Finto è un classico della cucina povera toscana e si chiama “finto” perché non contiene carne, ma grazie alla lenta e prolungata cottura acquisisce una consistenza densa e quasi carnosa, proprio come quella di un sugo “vero”.

Si prepara tagliando finemente un paio di carote, una cipolla, una costa di sedano e del prezzemolo, e facendo sudare le verdure in una casseruola strofinata con un spicchio d’aglio e abbondante olio extra vergine di oliva. Quando la cipolla diventa trasparente e le altre verdure sono morbide, si aggiunge un bicchiere di vino rosso, preferibilmente Chianti, e si fa evaporare. Si aggiunge infine un barattolo di passata di pomodoro e si fa andare a fuoco dolce per un’oretta prima di condire la pasta.
